Varsity coffee also stock and promote a range of traditional flame roasted coffee. This is a process of direct flame roasting of the coffee beans. This enables the roaster to achieve a high roasting level preventing any ash or burn whilst protecting the delicate flavours of the bean which can be lost in conventional oven baked roasters. The beans are tumbled over a naked flame which produces a great looking bean with some case hardening ensuring some lighter roasts having a slight shine.

At the Indian port of Malabar these beans are laid out on concrete patios. They are then exposed to the tropical rains that sweep up from the oceans around India across the south west of the country. For 3 months they are meticulously raked and spread, until golden brown. Medium-bodied, dark roasted; beautifully smooth with a sweet, spicy kick, this coffee is unique to the lush Malabar coast of Karnataka & Kerala; it has protected status.
